“Smoked Ceviche”: For those that love a smokey flavor on everything

Ingredients:

  • 1 pound fresh white fish fillets (whatever fish you like), cut into small cubes
  • 1 cup fresh lime juice (about 8-10 limes)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and finely diced
  • 1 avocado, diced
  • Salt and pepper to taste
  • Optional: 1 cucumber, diced
  • Optional: Tortilla chips for serving

Instructions:

 

  1. Smoke the fish: On a smoker set to 180 degrees or “high smoke” place your fish fillets on for about 5 minutes. Then crank up the smoker to 400 and smoke your limes (cut in half) for about 5 minutes.
  2. Add Lime Juice: Squeeze the smoked limes over the fish, making sure it covers all the pieces. The acid from the lime juice will "cook" the fish. Stir gently to ensure all pieces are coated. Cover the bowl and refrigerate for at least 15-20 minutes.
  3. Mix Vegetables: In a separate bowl, combine the cherry tomatoes, red onion, cilantro, jalapeño, and avocado. If you're using cucumber, add it as well.
  4. Combine Ingredients: After the fish has marinated, drain most of the lime juice from the fish (leaving a little for flavor). Add the fish to the bowl of mixed vegetables.
  5. Season: Gently toss the mixture and season with salt and pepper to taste. You can also add a bit more lime juice if desired.
  6. Chill: Place the ceviche back in the refrigerator for another 15-20 minutes to allow the flavors to meld.
  7. Serve: Serve the ceviche chilled, either in small bowls or as individual servings. Optionally, serve with tortilla chips for scooping.
  8. Garnish (Optional): Garnish with additional cilantro or slices of lime for presentation.
